We believe that happy, stress-free cattle make better beef. Our animals are cared for daily. They always have access to fresh, clean water, free-choice salt and minerals, and plenty of space to roam — the way it should be.
All of our beef is dry-aged for a minimum of 14 days to enhance tenderness and bring out the rich, natural flavor. Highland beef isn’t just a healthier option — it’s a cut above the rest. Studies have shown it to be lower in fat and cholesterol, and higher in protein, iron, and omega-3 fatty acids than most commercial beef. And thanks to its heritage genetics and pasture-based diet, Highland beef offers a depth of flavor that’s hard to match.
